Has anyone done this route before? Any tips on what route to take/places to stay? Buying bikes in Amsterdam? Open to camping, homestays, hotels, etc.

Biking from Amsterdam to Berlin
If you haven't done any planning yet, I'd start of with creating a route via cycle.travel/map. It's an online routing planner that relies on open street maps bike paths and will generally pick dedicated long-distance bicycle routes were available. In your case, I'd enter Amsterdam as start, Berlin as finish, and then drag the resulting route to Hamburg to take in more of the long-distance cycling routes in Germany.
I am doing the route now. I went Nortb from Amsterdam over the Afsluitdijk, that was good fun. Neae Leeuwaeden there is a Pole camping spot (free camping). I then managaed to camp in the abundent forest by Wiefelstede above Oldenburg. I head over the top of Oldenburg, caught a ferry at Brake (€2.50) and headed straight for Hamburg. I stopped for the night just before in the forest near Buxtehude. I am currently in Lüneberg which is beautiful.
I would love to know how you get on. I have a friend in Amsterdam if you need help procuring bikes etc.
