Has anybody some recommendations about routes on corfu, albania and macedonia? What places/routes/roads are scenic, interesting and/or quiet to cycle?

The coast road of southern Albania (Vlore to Lukove) is one of the best roads I've ever ridden. There isn't a lot of traffic because there is a quicker highway inland. There is a huge climb and downhill right when you leave Vlore but then the rest is rolling hills that offer stunning views of the coast. I then took the ferry from Serande to Corfu, and once you get outside the main town there, the rest of the island is super fun to explore on bike. Best of luck!
