We spent six weeks last summer cycling on our tandem in the Pyrenees and the Picos de Europa. It was a fantastic and challenging trip. Hopefully you like to climb. We did over 60 Cols. We used the lonely planet cycling France book for the basis of our trip through the French Pyrenees. We didn't come all the way through the Spanish Pyrenees as we had some wheel trouble so took a train from Jaca to Girona to do more riding without all the weight. Francois and Helene are great warm shower hosts in Pau France.
