You can find both canister based fuels and liquid fuels (including methylated spirits) in Tasmania. Because most visitors fly in/out you can often find abandoned half-full canisters and bottles of spirits at hostels -- free for the taking so if you are staying at a hostel on arrival it's worth checking for the freebies before going out to buy. (I live in Sydney but have travelled and camped in Tasmania several times in recent years.)
You may not be able to take the gas on the airline, so you will have to buy it when you get to Tasmania. Woolworths have cheap camping stoves and the right gas to go with them ,so it might be convenient to just buy them there and dispose of them there before you leave.
