New Caledonia information wanted.

Hi, we're a married 50 year old couple planning a 4-5 week cycle touring holiday to New Caledonia, May - June and would welcome any tips or info from people with local knowledge. I've done a web search and it looks very appealling to us, from what I could find. Particularly we'd like to find out a bit more about camping around the whole island and also in Noumea (Or other cheap accomodation options), fresh drinking water availability, and any must see/do things.
We are quite comfortable riding anything up to 100km per day, generally average about 70km per day with a rest day after 4-5 days, and are equally happy riding on tarseal or gravel. We have some very basic French language knowledge and are planning to learn/improve our French as much as possible before our trip.
Currently our plan is roughly to head straight to Noumea on arrival, maybe put bikes together at airport and ride from there. Spend a few days in Noumea while we buy any supplies we need and get info on further travel, and check out options of visiting and cycle touring on one of the outlying island for a few days (Lifou, Mare or Ile des Pins – either then or at end of holiday).
We’re thinking of then spending approx 3 weeks touring (camping in tent as much as possible) around New Caledonia, travelling up the west coast and then back down the east coast before crossing over and returning to Noumea for remaining time. (if we haven’t already been out to one of the islands we’d try and fit it in here).
Any other information about things like safety, roads/areas to avoid, better route, shops/food, local etiquette, availability of power to charge camera batteries and obtaining bike boxes to pack bikes for return trip would also welcome, Cheers.

Did you ever find out

Did you ever find out info/go? I'm planning the same.
I did read somewhere that food from stalls/shops and water is a plenty. The latter possibly being polluted from some streams (near towns i suspect). July/august suppose to be best time for going temp. /weather wise and heading north up east coast at that time there is a chance of getting a tail wind from trade winds? or just wind... cheers
